Red Bean Bites

Its almost Diwali and I am always scouting for healthy and yummy options for home made goodies.

I love red beans aka rajma and rice, my go to easy meal option. So, my pantry is always stocked. This time I soaked a batch to experiment. Its my first time with red beans into something gooey, and i am impressed the way it turned out.











High-Protein Red Bean Bites

made with kidney beans. Healthy, vegan, gluten-free, oil-free and no-bake.

INGREDIENTS


  • 400 g kidney beans (rajma), cooked

  • 150 g oats

  • 10 dates (6)

  • 50 g peanut butter (homemade)

  • 4 tbsp beetroot powder

  • 1 pinch of salt

INSTRUCTIONS

  1. Place the oats in your blender or food processor and pulse until they reach a fine consistency

  2. Add in the kidney beans, dates, peanut butter and salt and process into a smooth and non-sticky cookie dough texture. You can add a some oat flour if the dough is too sticky. If you feel its tough, add a little milk.

  3. Transfer to a bowl, add beetroot powder, I personally love the natural colour it adds. Using your hands, form medium balls and roll them in a little oats

  4. Place the balls in the fridge for at least 2 hours before eating.

I kept them in the freezer for a few hours and found that they taste even better!
